  • Step 1

    Position a rack in the middle of the oven and preheat to 350 degrees. In a small bowl, combine the breadcrumbs, parmesan cheese, herb, salt and pepper. Grease a small sheet pan with a thin coating of oil.

  • Step 2

    Pat the chicken dry and transfer to the sheet pan. Use a butter knife, offset spatula or your fingers to spread a layer of mustard over the top of the chicken breast. Sprinkle the breadcrumb mixture over, pressing it down so it adheres.

  • Step 3

    Bake for 25 minutes, or until the chicken registers 165 degrees on an instant-read thermometer. Serve warm.
